Black Bean & Sweet Potato Soup

3 cans prepared black beans
2 Tbsp olive oil
3 Cups chopped onions
2 sweet potatoes
1 can or jar tomato paste
sea salt and freshly ground pepper to taste
1/2 chipolte pepper, chopped (optional)

 

Peel, cube and steam the sweet potatoes
Sautee onions in oil
Combine beans, potatoes, onions with all remaining ingredients and use enough water or vegetable stock for desired consistency. Heat on medium-high until heated through.
Sprinkle with fresh cilantro and avocado. Add a dollop of “cream” to top.

 

Cream
1 C cashew or pine nuts, soaked 2 hours
1/4 C water
2 T lemon juice
1/4 tsp sea salt
 
Drain and rinse nuts. 
Blend until completely smooth.
