Cauliflower Couscous

1/2 large head cauliflower
1/2 bunch parsley
1/4 Cup mint
1/2 Cup cherry tomatoes
1/4 Cup kalamata olives, chopped
1/4 Cup red onion, chopped
1/4 Cup lemon juice
3 Tbsp olive oil
1 clove garlic, minced
1/2 tsp sea salt
Chop cauliflower and pulse in food processor.
Place in bowl.
Chop parsley and mint in food processor until fine.
Add to cauliflower.
Stir in remaining ingredients and toss until well combined.
Serve over greens with a side of hummus.
