Cilantro Sauce

1 Cup fresh cilantro leaves
1/4 cup canned coconut milk, unsweetened, low fat
2 Tbsp fresh lemon juice
1 jalapeño
1 garlic clove
1 inch fresh ginger
Blend until smooth.
Serve over brown rice, steamed tofu or tempeh, stir “fry”, lentil burgers, steamed veggies or use as a base for a soup.
