2 cucumbers, peeled and chopped
1/2 Cup raw cashews, soaked for 2 hours if possible
1 Cup water
1/4 tsp cayenne pepper
1 clove garlic
1 Cup fresh basil
4 Tbsp lemon juice, fresh squeezed if possible
1 tsp sea salt
1/4 Cup fresh mint, chopped
Blend all but mint.
Serve in bowls with sprinkled mint on top.
