2 Cup brown rice
1/2 head red cabbage or broccoli , chopped into small pieces
1 Cup chickpeas, canned, drained
1/2 red onion, diced
1/2 cucumber, cubed
1/2 Cup fresh parsley, chopped
1 carrot or beet, grated
1/2 Cup hemp seeds
Cook the short grain brown rice. Mix all remaining ingredients together and lightly dress with tahini dressing below.
1 Cup tahini
1/2 Cup lemon juice
1 clove garlic
water to create desired consistency
salt and pepper if desired to taste
Blend. Then drizzle on rice bowl.
